The general theme of the story is the absolutely clusterfuck confusion of war. Getting shifted around as your life and the war spirals out of control is the central theme of the story.
Only 5 had a really developed cast of characters, really. Others only had one or two.

They fucked up the story, very badly. They established that after the comm sats went down Erusea fragmented, "borders" did not disappear, but multiplied. But the final mission acts like it worked and everything's better, but its not. Also note that Trigger's anti-Osean crew just decides to pillage one of these Erusian splinter factions' bases; the mission where he downs Mihaly, just to take their supplies. They're guilty of the very thing they accused Harling and Osea of doing at the start of the game at the penal colony air base. Except they're supposed to be their own crew and holier than thou, while flying Osean planes and colors. The game makes the mistake of saying that borders shouldn't exist while Belkans are trying to restore Belkan sovereignty, just like with Mihaly and his country. That scene where Erusea splits apart before the actual final mission was the realest part of the game, also some of the coolest.
Also Stonehenge doesn't work anymore, again after killing one Arsenal Birb.
The homages and references were cool and it looked like the series was back on track, but the game was being influenced by current trends in HOLLYWOOD.

But some of the subverting of expectations did turn out good. Like when they killed the Kestrel 2 off screen when it decided to head to Farbanti, ALONE, but the real Kestrel 2, the Andersen, survived, in the same manner as Kestrel 1.
The thing is is the gameplay just wasn't satisfying too. The quick turn L2+R2 system is also biased against earlier aircraft. In older games you could go beat end game planes with starting game planes. That's because the older games only relied on two things, the angle of attack when launching a missile, and the speed of the attacking aircraft. This was what made Ace Combat still be considered a "flight simulator" (arcade).
High-G turns really hurt it.

They weren't anti-osean, and that was one of the better parts of the game since it showed that it's not always black and white and the figurative "good guys" can also do evil shit during a war when it's necessary. I do think the game still has the problem of painting Osea as complete lawful good a little too much, but it did much better at showing their shittier side too than any other game in the series has done so far.

Correct. I'm referring to the underlying plot of the game in the first few missions when Trigger is sent to the Penal Colony Air Base. The one where Avril murmurs about Osea instigating by having their Capital and major cities drone striked all at once, in a cutscene. Turns out you can't really believe the stuff characters in 7 say to each other, which is kind of bad when 5 and 0 had at least some level of coherence.
Also I got the uneasy feeling that they were just killing off characters from 5 for no reason. I think Snow died too, as well as all of Sea Goblin. Blaze is probably alive even if the Kestrel 2 is sunk, because his plane, marked number 015, is used by Trigger in the game.

It wasn't so long ago that I heard tells of IRL German Panavia Tornadoes going against US F-22 Raptors on a friendly dog fight performance comparison and the Tornado being able to put up a fight. There's a tone in AC7 where that type of plane is just garbage and should be mothballed. That MiG-21 tho, that one's never retiring ever.

There is a large difference between high-g turns and post-stall maneuvers and I can't tell which on you're criticizing. Because High-G turns were introduced in 6, and can be used with any aircraft, so it's in no way biased against earlier ones, in fact planes like the F-15 are more maneuverable than the F-22 in that regard.
The ones that are "biased" are the Post-Stall Maneuvers, which can be fun and lead to some engaging tricks, it's not like it's mandatory to clear the later missions and in fact it's quite hard to actually integrate it into your playing.
Additionally, you still have to actually line up your shot, you're making it sound like all you need to do is get a lock on no matter what your angle or speed is and fire, when that's not true at all.
The eu multiroles are the only ones with cruise missiles so fuck your amerishit

It is good but 5 already established that the reason this shit is happening was because there was a subfaction of Belkans in the Osean military. The reason the base commander in 5 was so hard on Wardog was because he was being fed bad info, by Belkans. So there was really nothing to gain by saying Osea bad early on.
Instead they should have focused more on the mission happenings related stuff. Like why Gargoyle tried to fire at the Space Elevator. Believe me I know why it happens but so many others who played the game doesn't know why. To them its just a plot hole, along with many other in-game events.
Also the IFF and communications systems being 100% satellite only in 7 is a big joke. I swear in real life some people know that the sats are the first thing some guys like China will go after, and they already designed network systems that stay online even if the internet goes down for all of us.

It feels like they're just moving out of the screen by force of the game engine moving them to the sides and not because of their physics. Its literally the Flying Guitar haxx from Ace Combat Joint Assault.
In real life only planes with thrust vectoring can actually do what you're describing. Like the Su-27. Other planes might break apart into pieces because they literally weren't built to do that shit, just drop bombs.

The AI always cheated like crazy when it came to their ability to move like the player and in 7 high-G isn't even a factor, the drones are just like ace bosses or ZOE from previous games except with less health.
In mission there're some lines for "osean" awacs that tells people to shoot down the princess. That F18 pilot fell for Erusian hacking

The mig-21 is the second most maneuverable jet in the game, though.
ZOE was easier. AC7 is the first time I've seen an enemy dodge a SAAM from a dead angle. Really destroyed the reputation of that weapon to me.

Its funny because at the last missions he actually does mark the yellows as enemies or friends on his own. Its not as if he can't talk to the yellow targets himself either. He does that at the Tyler Island mission.
All he had to do was ask "are you Erusean/Osean?" If they're Erusean he could just say he was Erusean Awacs and cut it off, and mark them as targets.
But that would hurt the gimmick so for the sake of their gameplay design I'll just have to accept it.
Its sad because the Eruseans lost the war by default when they murdered their own leaders. Erusea wasn't always a kingdom, but now that they were they got pretty strong.

Erusea only got the upper hand at the start of the war because they managed to bumrush Osea first with drones. After OADF gets moving and captures/destroys a few stragetic point Erusea got fucked in the ass without lube.
