Because being undead means you are negative alive.
Restoring your health returns you to regular dead.
This would make sense, but killing them even more returns them to regular dead also.
So I can only assume that when you cut a zombie with a sword, you are actually healing them.

Technically there are Restorations spells that do hurt them, and they are in the same category as the healing spells, but yes the healing spells themselves don't hurt them. You also have Necromantic Healing that heals undead.

The only two spells I can think of which work like this are Holy Light and Death Coil. Other spells which heal work just the same, I think, and there's no special targeting flag for undead units outside of specific abilities.
