Literally nothing is stopping them changing minor elements of the story. They can also make her death more peaceful and heroic or outright avoidable. Most Japanese RPG remake or re-releases I've played add fan-service like this. We've already seen them change how Zack died before, and he's way more important than Jessie ever was.

They never said anything so concrete about length that I've seen. We don't even have confirmation that the first part will be the entirety of the Midgar section of the game at all, that's just speculation.
Its part of who Aerith is as a character. Her death is both a major plot point and the reason meteor is eventually stopped. I'm not putting it passed them to bring her back considering they brought Tidus back and his disappearance was supposed to give meaning to the themes and ending of X, but it'd be fucking stupid and I think SE knows it.

We obviously have no idea what they'll do, but from what we've seen so far I'm expecting a largely faithful remake with much more focus and detail. Rather than optional or noncanon alternatives, I'd expect a larger focus on cutscenes, character interaction, and world building.
Hopefully we'll get an actual taste at E3 when they reveal part 1 will be out before Christmas.
