One thing I have not seen discussed is the fact that the scene with Aerith shown in the State of Play stream was literally divergent from the original games dialogue. In the original, it was an optional choice to get the flower from her for one gil. In the remake, it seems they are restructuring the scene so that she gives it to Cloud free of charge. That right there tells me that this story is going to play out differently than the game and all bets are off.
There could still be a choice after Cloud's Snake line.

Kingdom Hearts 3 was packed full of every goddamn mechanic and feature introduced over the last decade of handheld games but the one thing they refused to include is stuff for people that like Kingdom Hearts 2 - challenging boss fights against humanoid opponents and tournament matches at Olympus Colosseum.
