Full flush is way easier to get than its han value would suggest and is always worth going for.
Honor tiles should be kept until early-mid game rather than discarded immediately.
Flow is absolutely real, but can shift so never give up.

toi toi is a great way to mess up a great hand,

should I usually only go for closed hand if I'm a completes beginner rather than pon, chii , kan sometimes without being really sure of where I'm heading?

When you:
a) have those 4 pairs early and you feel that enemies will discard at least two pon'nable tiles before end of 6th turn
b)have some spare doras that are ponnable
c)are able to upgrade your hand by tanyao, honitsu or yakuhai
d)if you have one or two closed ankou

Always go for chiitoi when:
a)situation at the table seems dangerous - chiitoi allows you to freely change tiles you wait on, and it's closed so in desperation you can disassemble pairs to get 2 free discards
b)someone at the table called for kan - chiitoi dora 4 is a haneman, and with 2 dora indicators + uradora it's very plausible
c)your pairs are not pon'nable (else dead tiles or something rarely discarded like 4-5-6 or in some cases dragon tiles).

I've been playing for 6 years, and I am more inclined towards chiitoi, because I love closed hands, and toitoi at advanced level is basically suicide. But be prepared that this yaku will backstab you countless fucking times.

About toitoi, you need to be able to run away into another yaku if shit hits the fan. Into tanyao, into honitsu, into yakuhai-only. So basically don't start with pon of shit winds if the hand doesn't look like one suit hand, and don't begin from terminals pon, too. Fucking toitoi is a lot of risk for 2k reward. Imagine someone riichiing, they most likely have shanpon - two pairs - wait and since you most likely won't see those tiles dropped you'll save up them as well for your own toitoi use - just to deal them into that riichi.

Go for chiitoi if you don't meet the conditions for toitoi and a normal hand is too far away (i.e. lots of middle pairs). If you're first to tenpai, riichi as soon as you can without wasting time trying to draw a better wait, and if you're not first to tenpai, fold immediately and don't push because having a single wait means the other person is far more likely to win than you are.

The way pinfu works is it's actually a "no points" hand. You essentially have to have 0 fu in the hand, which means no triplets, no value pairs, and your wait has to be an Open wait, meaning 2 consecutive number tiles that are waiting on a tile on either side to complete.

I've been playing this game on and off for years, but I can still never play this game in real life without relying on someone else to calculate the scoring because it's so convoluted. Pinfu is still only 20 fu if the hand is closed, but if you get tsumo then you also have Menzen Tsumo so it's 20fu 2han. If the hand is open, and only has 1 han and no fu, and you win by ron, then it just gets counted as 30 fu anyway to prevent 20fu 1han hands like you said.
