The best system would be to implement an option to auto level to a level that makes fights just easy enough to beat but hard enough to actually make you try. Like you beat a boss and get to a new area but then a story event happens and you are given the option but you lose out on some good shit if you do. You can still earn xp from fights and level past the auto level ups if you choose to keep grinding.

that'll just attract one of the worst types of handholdy or lazy players.

The boss rush mode in most Ys games do something like that. You can outgrind bosses in the normal game, but for the boss rush your level is set to what the game expects you to beat the bosses at.
