FPS mod and freecam mod are awesome (I made this webm as a joke since there's only like one working mirror in the game anyway).
Cheat engine lets you do some really fun stuff that you would never be able to do on the console versions. You can even freeze the adaptive difficulty level.
And then you also get all these skins and modelswaps to use as costumes where some of them are higher quality than you would expect from official Capcom DLC.
There are also mods to change some audio and UI stuff.
I do wish there more substantial ones that change the map / enemies. All I've seen are ones that swap all the zombies for Mr Xs, shit like that
