I'm playing it on Novice and it's way too easy right now (just got to the exotic laboratory and unlocked the slide move). Should I increase the difficulty? I haven't died to a boss yet and always beat them with 70%+ HP left.

Crank the difficulty up if you feel like it (There's an NPC in Rabi Ribi Park that can do so without starting over IIRC). The boss fights are one of the highlights for this game, so if you're finding them too easy it may be more enjoyable if you push the difficulty up some.

There are achievements for getting max rank for the bosses, but during the boss fight itself you'll do more damage the higher your rank is, so generally you'll want to keep it as high as possible.

I played on Vita, what issues did you have? I only had a problem with crashing in Irisu's fight, game was pretty playable otherwise. Don't think I overclocked in this game in particular, but I know it makes a huge improvement in framerate in every other game I tried. I only use ocvita though, not the true overclocking LOLIcon provides.

There were some slowdowns during the most hectic parts but I never found it serious enough to mind much.
The crashes were the worst since it happened multiple times while trying to beat that boss, but they never happened anywhere else in the game.

Attacks are dealing higher damage (on BEX you'll die in 5-10 hits, depending on the boss) and the patterns are more complex and are usually faster. The bosses also have higher levels, and thus have higher HP. I think the bosses also have higher resistance to stun.

Pretty much everything. Faster and denser bullet patterns, more health and damage, new attacks, stronger attacks get used more often.
Then to top it all off every boss gets enraged at 25% as an extra fuck you.
