then you add on a layer of restrictions to add value to the hand with increasingly rare ones adding more value

So let's talk about personal goals and fixing bad habits. Here's my list.
1. Between honors and useless numbered tiles, I will discard the useless numbered tiles first.
2. I will not throw away doras until they are confirmed safe.
3. I will pay more attention to if a person discards from hand vs from drawing.
4. I will run away if my hand looks like garbage at the start. I will try to aim for safety rather than tenpai.
That pretty much rounds it up on things I believe I need to improve on.
Lag nearly fucking killed me, not sure if it was me, the server, or somewhere in the middle. I barely managed to stay in the game with one other guy, the other two people disconnected entirely. What a lame way to scratch out a win. Half the time I was auto-discarding.
I'm tempted to play an East round just in case I lag again but I'm close to ranking up and don't want to get fucked by tanyaos.

If you ban open tanyao games just turn into riichifests where you get into tenpai as fast as possible, riichi, and pray. Similar with akadora, they're an easy way to add some bite to fast, cheap hands so you occasionally have to be actually afraid of them.
Honestly, open hands should probably be slightly stronger than they are. You're basically restricted to tanyao and yakupai, maybe toitoi, whereas riichi can be easily combined with just about any other yaku and offers huge benefits. I wouldn't mind seeing iipeikou go from concealed to non-concealed.

Think about it this way, when you riichi you force other guys to slow down their hand or even folding completly (not in this specific case when 1 guy is in tenpai and he draw his winning tile right away but still) , you will never fold this yakuman hand and its a 9 sides wait so why not?

1 is of marginal benefit but okay, 2 is unnecessary unless you're actively defending, 3 is largely unnecessary unless you're already at a relatively high level, 4 is generally a bad idea outside of certain rare circumstances.
Rather than thinking about these specific things, if you want to improve, you should focus on:
1. General hand building skills - tile efficiency, building value, call judgment
2. General defense
3. Push/fold - knowing when to attack and when to defend

Got mine yesterday, but I still prefer to stay in bronze and bully nerds. Turns out it's pretty easy getting first and second in South every time if you just manage one or two 3-5 han hands against always open tanyao shitters .

Sanshoku, chanta, and honitsu are all slow as hell, though, and they're really easy to defend against. I didn't say opening your hand was weak, I said that it could probably be stronger. Open hands also tend to not combine yaku easily, while riichi can get a bunch of synergistic ones easy as pie.
This would have been such an epic hand.
Because when you have a yakuman (or really just anything that's mangan or bigger) you want to maximise your chance of winning the hand, and for that sake you don't want people to know that you're tenpai because they might choose to fold. Mahjong strategy is all about expected values - the likelihood of outcomes multiplied by their value. There has been lots of research and statistical analysis done on this.
I've tried it, but the lack of red dora is a letdown. I was hoping there was a better option.

In general, you riichi a yakuman hand if you have reason to believe people will use your winning tile to defend against you (skill level: very high) or you don't believe it will come out at all and you're going to rely on tsumo, so you riichi so that people fold and give you more turns to draw (skill level: medium-low)

It is simply completely unnecessary to tell everyone that you're in tenpai. If they know, they can fold, or they can play around you. If they don't know, they might still try and push a bit, or they might be more willing to declare riichi themselves which strips them of any further ability to defend. Even if it were so obvious that you've got a single suit hand that they would not feed you, then riichi will have no deterrent effect anyway.
Adepts can still play in bronze and only 49 players are higher than adept.

Risky means playing tiles you think someone could be waiting on. This is a little bit more advanced than where I think you are at the moment though. Get a hang for the game and the rules, and then if someone Riichi's, try to only play tiles he's already played, or someone else played after that riichi.

Your own hand value. When you win, everyone pays you points based on that value. If you ron off of someone, then that person has to shoulder the ENTIRE table's debt.

chi/pon/kan or 'calling' is something you want to do when you have a hand that allows you to go for a specific open yaku or an otherwise advantageous hand (yakuhai or triple dora are fairly common). Once you call you are locked out of closed yakus, so its a gambit. These things will come with time, if you an opportunity occurs where you think you can achieve a good hand through calling, then by all means go for it, it's good practice even if you fail.
How points are loss revolve around how the person with the winning hand got their final piece. If they drew it from the wall, they get a 'tsumo' and the points are divided and taken from all players. If they called someone else's discard as the final piece of their hand, it's called a 'ron' and the person whose discard got called pays full points to the winner.
There are plenty of risk in the game but there is a reward in the end if you get lucky. For example, Opening your hand is one of them. Your opponents (at least the ones that knows what they're doing) can predict and/or your moves. I recommend not doing that unless you're 100% sure you'll get what you need and not get buttfucked in the process.

the number of han for each of the hands mostly determines how much they will be worth, yakuman being the highest hand value. You'll cause enough ron's with your discards to feel what tiles are risky eventually.

chi, pon, and kan lock you out of having a closed wait/hand. Closed hands are harder to form because you can only use your draw for new tiles. Once you do any of those you have an open wait/hand but thats fine its just worth less if you score.

yaku just means a wait/hand that contains all the necessary elements to score. See Always pick cat
People in bronze aren't gonna "predict" your moves. They're not even going to look at your discards. You won't survive a second in bronze east if you keep your hand closed.

It starts to feel natural once you've invested a little time. It's really healthy for the game, because if someone makes a call you know they can't just win with anything so you can get an idea for what they could be going for based on what their calls are.

Because it's easy to have a complete hand. If it's not for the yaku. It just becomes a race on who gets the complete hand first. That's not to say the current rules isn't a race, but it requires luck and skill as opposed to a game without the yaku system.

You want triplets or sequences, but sequences typically come easier since there's a lot more tiles that can complete them. You want to hang on to two adjacent tiles, and something like a 223 is nice because you need either a 1, a 2, or a 4 to make that into a complete set. Don't sit on more than two pairs unless you're going for 7 pairs or all triplets, but keeping at least one pair is good since a winning hand is made of four sets of 3 and a pair.

If you start with a pair of dragons, always hold onto it at first because you can pon it if someone discards a third or you can use them for safe discards once the other two come out. If I have singles, I generally hang onto them hoping to draw a second one or discard them once I see someone else discard them. That's because it means your odds of drawing a second one just tanked, and it also means it's safe to discard it without feeding into anyone's hand.

Your first discards should generally be guest winds (winds other than your seat wind and/or the round wind). You can treat winds of your seat and round basically the same way you do dragons. Remember that if your seat and round win are the same, that wind is worth 2 han instead of 1 if you get a triplet of them so they're a little more valuable to hang onto.

So far I'm doing all he does. I'm playing dangerous tiles whenever it's needed to advance my hand because go big or go home, I'm always avoiding the most optimal and rational part and instead trusting my instincts for big dick hands, and I'm throwing a bunch of smug emotes before roning people to tilt them. And most importantly, I am doing all that with extremely big confidence, like there was no way for that to backfire. His only signature move I am not using yet is cheating because this is virtual mahjong.
Needless to say my win rate is abysmal. What else am I missing to make this work?

It teaches you some advanced rules. For example, I did not know that if you kan someone's tile and draw your winning tile, the person you kan'd from will have to pay you the points as if you had ron'd them. The blind guy in Akagi explains that rule and you can actually learn it from watching the anime.

Against open hands, assume tenpai if they have three calls in the first row of discards, two calls in the second, or one call in the last row.
