Always, always play a series by release order. I've ruined a bunch of series by listening to people about "play first _____, it's the best one".
The only Sakura Wars I've played is 3 (I'm an EOP so I used a script translation posted on GameFAQs) but according to fans it goes from best to worst 2 > 1 > 3 >>> > 4 > 5 2 being a direct continuation to 1 requires the player to play it first.

For the people that view this series very highly, why exactly do you like it? I came across the series when looking for SRPGs and was really let down. Is it one of the best games within the dating sim genre, or is it just so successful because it brought the dating sims to a new audience?

It was a flagship SEGA title in the 90s. It was literally bundled with the Saturn and Dreamcast and had a huge following. It was a pretty good SRPG on its own but it also had some really innovative VN mechanics too. Choice selection is timed and allowing it to time-out on purpose is also a valid choice.
If you live in Japan you can get the consoles and even the games for a minuscule amount.
sweet, I always did want to play this when I was a kid. I thought I read that it was almost as popular as FF7 in Japan back then.

It may be an outdated concept these days, but back then the fact you could "play" a harem cliched anime and interact with the characters was mind blowing for japanese audiences, that's why is so fondly remembered in Japan. That and the girls are cute and likeable.
