His dad is also a sociopath and when Tony grew up he accidentally caught his father torturing a man to death and enjoying every second of it, which is the entire reason he keeps passing out.

The fact is that Tony and his sister could have stepped out of that life but instead decided to be exactly like their own parents, Janice being a carbon copy of her mother alongside her mother's addiction to being around violence and anger all the time, and Tony being a carbon copy of his dad.

How did you miss the fact that tony shows an unrealistic sympathy to animals, or the fact that he passes out whenever his job requires him to do something exceptionally violent?

The fact that Tony changed after nearly dying is because as he himself said, the life he chose is either death or prison, and he keeps avoiding both only by sheer luck. The final two seasons really show how deranged he becomes, starting to get viciously violent, making terrible decisions that negatively impact the entire family, and dealing with any form of feedback by threats and murder.

At the end of the show Tony barely sees his children anymore, he completely fucked up his relationship with his wife that is sort of bound to him now through his financial support and because she doesn't want to give up the luxuries, has murdered his entire line of succession and all of his top earners, and turned everyone that can be considered his friends and family cold towards him.
Notice how everyone in the show goes from being kind to Tony to talking shit behind his back and pulling the ropes where Tony isn't looking, he can't run the family for shit near the end, and it's been implied several times already that Jackie was the best choice out of all of them.

No there hasn't been and we will probably never get it considering you have to strike a good balance between realism and entertainment, and America's current obsession with portrayal of a character's identifiers rather than showing a complex and layered character. A show like The Sopranos just wouldn't fly anymore if you realize that the show was about a hyperconservative and very religious crime family that was openly racist and homophobic, with all members having a stay at home trophy wife. all the while defending the characters at the same time by pointing out their upbringing, Italian culture, Christianity, and the cutthroat temperament of its members.
