this is some of the shittiest shit ever, it adds to the difficulty curve 'cause it takes time to train someones brain to dodge into fucking attacks, obviously once you played one from game the rest become piss easy but i-frames suck anyway

Because dodge and sprint are on the same button, the dodge doesn't actually happen until you let go of the button. This combined with the overly persistent input buffer can make a lot of situations more annoying and restrictive than they should be. It's been an issue since Demon's Souls.

Definitely, it's kind of hard in DS3 though because of the mana bar

Only if you start as sorcerer though.
Pyromancers dont have the spell sustainability and clerics only start with healing spells

It's not hard actually, you can get at least 10 Faith and heal solely through chimes. Only the very start might give issues with not having enough FP to kill everything but not only can you avoid enemies, you can get the dark axe and let that carry you anyway.
