Bloodborne > Sekiro > the rest
Bloodborne only beats Sekiro by having an amazing setting and atmosphere, as far as gameplay and challenge is concerned Sekiro is the superior, but Bloodborne just edges out from the extra work they put into it's presentation. Demon and Dark Souls need to let go of their nostalgia

Well I mean, there’s no Soul in Sekiro’s title and I don’t think there’s any soul items in the game
It's a sequel so gameplay, lore, and presentation are all mainly the same from Dark Souls 1 and 2. The only difference is since Bloodborne, Dark Souls 3 adopted a "longer, taller, lankier" aesthetic to character and building designs.
Some examples of soul:
>The fight with Maiden Astraea
>Crossing the fog gate and seeing Gwyn for the first time, with the music
>Ludwig regaining his humanity and wielding the MLGS
>Arriving at Fountainhead Palace for the first time
DS3's gameplay is a bad version of Bloodborne stapled to a bad version of Dark Souls, not to mention the FFXIII tier world design.

2 of those things are objectively better in DS3 than in any other Souls game.

Sekiro felt even more half finished than their previous games. In fact it felt like two different games got forced together and they didn't have the time to make it more cohesive. So many bizarre design decisions that went nowhere that that's the only thing I could think would have happened.
"Soul", in relation to From games, is a quality that varies massively when we compare player to player experience.
Now, please, follow me here,
Player 1, is a person who has not yet played a Souls-like game, and thus, has no real experience with the familiar mechanics or themes beyond that of which he's seen briefly through extraneous marketing media. This player will be enraptured by whichever game he should choose of the six, Demons Souls-esque From Software games. And at the end of their journey, player 1 will boast of its enrapturing atmosphere, and more importantly, its "Soul".
Now, Player 2, on the other hand, has played four or perhaps even five of the releases, a journeyed soulsman, if you will, and thus, has developed a fine taste for a particular and very narrow set of qualities. The "soul" of games. The soul of which he now pines strongly for, longing for that ephemeral sweetness of his first souls game. This player will stride through any new Souls-esque release with a familiar ease and, to their inevitable displeasure, an effortless grace.
This player will be miserable, and downtrodden at the end of their experience, and will eventually decry the release in their feverish madness as "Soulless", usually followed by a successive denigrating piece of terminology; "Garbage", "Trash", "Shit".
So, to conclude we can observe a unique phenomenon:

Dark Souls 3's gameplay is Dark Souls 1 except enemies are faster, you're faster, and you're given more stamina to deal with longer combo attacks.

Dark Souls 3 is nowhere near FF13 tier linear. The only "linear" thing about the games is what order you tackle the levels in.
