Not that bad if you lose a little bit. If it gets really low, you'll lose some dialogue options and frenzy more often, which isn't that bad unless you're going crazy in peaceful areas.

Yes, there are multiple ways to get humanity in the game, one that new players miss is just dancing in a club for a few minutes.

If you have the option available in dialogue, it will work, if you do not have the option, then you need to raise your skill or there simply isn't one.
