Irony is Sekiro is actually fairly easy. You have no stamina bar and a near invincible block. And unlike DS which punishes you for holding block, in Sekiro it helps your posture recover. You can sneak in a deathblow or downright cheese half the bosses.
The start when you have no health and are learning mechanics can be rough, but after that the game gets easier and easier. Last boss and Lady Butterfly were the only two seriously hard bosses for me. Seven Spears miniboss was rough too, but you can skip him.
Nothing in Sekiro comes close to Sister Freide or a dozen other DS bosses. Nothing as bullshit as Orienstien killing you with a stab through Smough's body.

KH3 is a special case where the player's moveset is so expansive and powerful that the only way to fix things is like what you see in Critical mode where being a reckless spammer gets your ass smeared across the floor. It's the same game that features a character that's way too powerful, you're just not going to get back up from taking a big hit.

Only RPGs. Difficulty in RPGs just means wasting more time grinding. There's no actual improving at the game or becoming more skilful, so an easy mode improves the game by cutting out the downtime in between the story or side quests.
