I think it's a Hollywood esque Western influence thing and art design issue. Like they're too focused on fidelity than how they execute the fidelity in a way that creates an atmosphere. One of the best Dark Souls areas to me was the Ash Lake which is one of the smallest but most effective zones as far as atmosphere delivery and buildup and gave me that old soul feeling.
