His whole argument in the Lost Arts video is based around the axiom of souls combat not being that good and the elements surrounding it being what makes Souls great instead. He says that the game focusing on action feels counterproductive when the core combat is far from the strongest aspect of it.
The problem with transporting that thought to Sekiro is that Sekiro actually changed the formula to suit a action focused experience. It's not trying to have a engrossing and immersive atmosphere like Souls does (evidenced by things like non-diegetic audio playing everywhere now and NPCs being unkillable), it's trying to be a action adventure game with focus on fighting game esque 1x1 mechanics, and it's great at doing that. You can't just say now ''I rather play a better action game'' when Sekiro is its own brand of action, very different from the likes of Bayonetta and DMC which are more combo based.
Moreover, he says that From Soft should either focus on action or go back to its roots, but that regardless, they should pursue something new. Again, that's exactly what the company did.
He's entitled to his opinion about the game, but using the same argument from Lost Arts to Sekiro is basically just him admitting that he's annoyed the company doesn't appeal to his tastes personally.

Tbh I don't want him to make a video on Sekiro because well, he doesn't want to, but saying that the same things he said in the Lost Arts video apply to Sekiro is kind of dumb, I don't even like the game but it is trying to do something different from the other Souls games (and Bloodborne), it even has a different name and all.
I played every DMC, every Bayoneta, MGR, some NG games and most Platinum games and I find Sekiro combat more satisfying than all those games. I won't say it's necessarily better though, it's just different and it can be seen as better or worse depends on what ground you use for comparison.

The reason you find Souls combat so good isn't because of the core combat itself but due to the other design decisions which pull you more into the experience. The combat itself is fairly simplistic.

Souls doesn't have a great combat system but it's certainly better than Skyrim. I don't even know if I agree with the notion that Skyrim has more depth, it really depends what you mean with that, but even if you make a contrived argument to reach this point, depth doesn't necessarily mean quality. a game can have the most complex system in existence and still be garbage to play.

Skyrim has more depth in that there is more you can do, and more things interact with other things to create results. (i.e enchanting a bow, to steal an enemies soul, and then reviving that enemy with a spell to have him attack his comrades)
I'd argue that holds more depth to it than anything possible in souls combat, although I do agree on the whole, souls combat is better just because it demands more of the player in the moment to moment.
If the combat was great it wouldn't be such a pain to fight more than one enemy at once.

The depth is actually about the same. Light attack, heavy attack, combos, block, shield bash, dodge roll, etc. Skyrim enemies aren't designed to be beaten by superior play, however. It's all stat-based.
Shitposting aside, it's more like most people can't properly conceptualize why they like something. They tend to associate their enjoyment of something with its most visible elements even when those weren't necessarily the biggest factors for their enjoyment. It's why people meme so much about Souls combat and difficulty, those are just the most noticeable things.

Zelda is an action/adventure game. Combat is one of the major pillars of the game. That's why there are enemies everywhere and a boss at the end of every dungeon. High number of things to interact doesn't necessarily translate into good gameplay or depth. It only does so if the interactions are substantial and meaningful. Saints Row 4 has countless skills, weapons, vehicles and etc for you to use but none of that translates into solid gameplay because the way they interact with the game isn't fun or substantial.
Souls has better combat than Skyrim not only because of its difficulty and careful planned level design but because it does a lot more with a lot less.
And btw, Skyrim melee combat wouldn't feel good to play even if the game had a billion different tools because the strikes have no impact and feel absolutely clunky.

But we're talking combat here, buddy, like, *just* combat, a combat that is fairly limited, the most interesting thing you can do in the Souls games is prepare for a combat (what levels do you upgrade, what items will you use, that kind of stuff) after that is just R1 or R2, roll sometimes, maybe parry. It is very limited compared to, you know, action games, and that's the problem Matt was talking about in his videos, the games were focusing too much in action instead of what makes the games special.
You know what? I'll give you the benefit of the doubt here. I've always been a PC+Nintendo guy so I never played those games. Maybe the combat is good. But even if it is, those games are nothing like Souls, so it doesn't negate the fact that Souls was revolutionary and the first of its kind.
Weapons have different ranges, animations (angle, speed and recovery), stats and stat requirements. If you're not being a reductio ad absurdum sophist you'd realize that those all change your play style in how you move, approach enemies, when and how often you attack and defend (if you defend at all) as well as how you distribute stats.
