I'm near the end and so far it's like Nioh and Dragon's Dogma where it was actually alot more challenging in the first hour of the game and gets substantially easier after that. Assuming most people just get filtered out after the first few bosses and then complain online about how hard it is. What is From's hardest game in your opinion?

While I don't think it's as simple as you're making it, I agree with your sentiment. I've played DS1, DS3, and sekiro, and sekiro was by far the easiest game.
In dark souls once you learn the main mechanic of the game (dodge rolling) it can still be difficult.
In sekiro once you get the hang of deflecting, the game gets immediately easier and stays that way for most of it. You're incredibly mobile compared to dark souls so you can quickly create distance from an enemy or boss if you need to, and in regular fights you can always just stealth away. The perk that grants you health on deathblow also significantly makes the game easier, not to mention that you literally get 2+ tries on bossfights.

People who think this is the hardest From game are probably trying to play it more slowly and carefully like its a Souls game, or they're trying to dodge everything. I did the same at the start of the game and was getting my ass kicked by tougher enemies, but started doing way better once I said fuck it and basically never go out of melee range and just parried everything like From wants you to.

Dodge is practically useless in Sekiro,
the only realistic dodge move is the diagonal jump, which leaves you open if the enemy chases.
In darksouls, you just roll multiple times and each roll "adds" to the last, practically keeping you immune to damage as long as you keep rolling and have stamina for it

NG is the tutorial. NG+ without kuro's charm is the real game because missing a deflect means you take damage rather than having block be essentially a total immunity button

I actually am a huge Armored Core fan. I've beaten every single one from 1-4 (which is somehow like 12 games). Picked up the first one in '97 when I was 14 years old. I never really found them to be super difficult. If a mission is too difficult you either upgrade some parts or try a different loadout. Most of the truly difficult parts came from bullshit levels designs or bosses being cheap. They are fun as fuck though, one of my favorite game series of all time.

Never played any of the newer ones once they changed the control scheme, so I can't vouch for them. Maybe they got substantially harder.

But they're completely different titles. Souls is either done all together or will retain the same action RPG elements that made it famous. If Sekiro gets a sequel it will continue down its current path. Either way they will remain separate.

I went through sekiro not using a single buff/candy besides divine confetti for fighting headless (turns out it's pretty much never worth it), and no consumable/throwable items either except for pellets in the beginning. Even with that, it was still easier than souls.

Maybe you shouldn't devalue the things you're good at, it would probably help your self esteem a lot

thats by design. the only exploitation deserving of criticism is the terrible enemy AI. they're easy to outrun, can only throw stones when you grapple away, and go back to their original positions for free backstabs.

Yet. There are no builds in sekiro. It doesn't get easier. If you don't master deflect and dodge, even tutorial enemies will kill you. You have to stay alert and position properly. You cant wear havels armor and just chug away on estus while tanking hits...

You're correct, it's easy. Deflect is broken and they ruin every tough boss fight with mikuri counters and lightning counter.
