That's why she murders, and why she's happy about viscera and gore and disemboweling. She wants to literally be in the womb again, be with mother once again.

In the interpretation of Jacks story that the grail used, she is actually Jack, the one that killed the prostitutes and there is no other Jack in that interpretation, but whether that is the correct interpretation is up for debate.

Fate interpretations get silly for the sake of writing the story they want to write. I ain't saying it's perfect.

Although I believe if there was an actual in lore reason for it, it would be that in cases like Jack the grail can summon any interpretation regardless of historical accuracy, and even less likely ones can happen if the summoner has a good affinity with a specific interpretation.

But history doesn't know who it was, so when it comes to summoning a Servant of Jack the Ripper, it just makes up some bullshit, and the child amalgamation is just one possibility.
