The time period between DS1 and DS3 is huge like thousands of years and the universe of Dark Souls doesn't operate like the real world so the geography change is the result of a big crunch.

Quelana points to the time duration between the Witch of Izalith to when she talks to you around a thousand years and that time a thousand years ago was a time when the first flame was dying for the first time. Considering DS2 is one of many fading fire era's in between DS1 and DS3 is very reasonable to say that the time period is thousands of years, maybe even hundreds of thousands of years.

Darkroot Garden is permanently in night time.
Each area in the game is almost stuck in its own space and time, but barely connected enough to allow direct transitions.
The way From did the day night cycle in BB and DaS3 is more consistent overall.

There is no past, no future, everything gets crammed into one singularity. DaS3 is at the end of anything that can be considered linear time. Everthing's converging on Lothric. Gael's fight is the last remnants of the world before it all becomes grey again. Fire can't continue, Dark enveloped by ash, nothing left. Dragons won.

The ashen realm is reality, everything in the 3 games was an illusory realm created in an attempt to extend their legacy. It starts crimbling and vrushing in on each other when the illusion fades specifically because it is fake. The dark soul has the power to create worlds as seen through the pai tings, which is why gwyn convinced the pygmies to sacrifice their souls to the flame and create fake lordran.

Filianore was the seal that held it together. Chances are that the illusory realm is a dream realm going by dark souls 2's lore involving dreams and memories of the dead, which could be used to infer that the realm is specifically the dead filianore's memory of the past.

Aria specifically wants a dark soul for her new painting, which is meant to depict a cold gentle world.

basically her slave knight Gael went on this mission, but did not return. You meet him after a long as fuck journey through the area where the kingdoms converge (possibly near Kiln of the First Flame) and breaking Filianore's illusion in the process, which fully exposes the world as it looks at that point, allowing you to find Gael who has spent countless battles trying to acquire as many dark souls as he could. Ironically the dark soul Aria was seeking ends up being his, since after killing and absorbing so many souls, his own became the most fit for creating the pigment for her new painting.

When you kill Gael and come back to Aria, nearly the entire church is on fire (consequence of killing Ariandel and Friede) which, combined with the dark pigment, will allow Aria to paint this dark, new world and leave the rotten one behind.
