If you let the supply dictate all terms, they will get all the power. When the demand enforces unfavorable terms on the supply, the most you get is a division of power, as the supply can never truly lose power, because they're not as disposable as the demand. There has been many cases, on series where some character dies, people complain about it and they bring it back with some shameless asspull.

Frankly, there are a lot of answers to this question, but I think a lot of stems from 2 main things:

a.) The video game is very much still in its infancy, especially when compared to the movie and comics industry. So, frankly, it still has a long way to go.

b.) Video games boomed in popularity at a time where the internet began to become more and more centralized, thus giving obnoxious vocal minorities a megaphone they really shouldn't have.

Neither of these should excuse anything, mind you, but it's just the way I see it.

There have also been cases where devs patch a game or release free content because enough people bitch. Just look at EAFront 2 or Mass Effect 3. Now granted the quality of said fixes may have been shit but they wouldn't have caved at all if people hadn't complained.
