Because the majority of the triple A companies are too scared for their wallet to want to take risks, so a game that has the potential to be amazing never gets made because it has a chance of failing since it's not some cookie cutter bullshit

And the indie scene most often than not doesn't have the backing to make something super high end, so they have to work inside of a "less is more" attitude (and don't get me wrong, indie devs put out some Good shit, but when was the last time you heard someone say OFF had the best graphics of its generation? — pic related)
