I thought the hunter was super special because the blood werewolf gets burnt up.
So that was him beating the curse blood or controlling it i guess. So he has control over it since he can turn his hand into the critical hit thing.

basically this but to elaborate, hes been cought in the moon presence's dream cycle. the moon presence is weak. so it gets humans to do its bidding.
in this scenario. it makes you unkillable as every time you die the night begins again. and it indirectly leads you to killing the great ones that rival the moon presence, it makes you do this so that you become powerful enough for you to become the new dream host. however as we know you can consume 3 umbilical cords which allows you to resist its power with your own.

I think it's both. The good hunter has innate resistance to the bestial nature of blood and it attracts the messengers.

So Vaati basically it's like this

At the start of the game your character comes to the city looking for Blood Ministry. Gehrman (or is that just some rando old man?), as the agent of Moon Presence, hooks you up with the Moon Presence/Child of Lorans blood which gives you a connection to an elder one. During the course of the game, you collect more of this power via the 'echoes' or remnants of old one blood found the beasts and/or hunters you kill. This power, and the Moon Presence constantly resurrecting you, is what makes you so strong. It's strongly hinted you aren't the only one whose been bound to such a pact. Ex. Eileen the Crow mentions the dream and says "Tell the little Doll I said hello", and speaks of no longer dreaming. She broke away somehow and rejected the Moon Presences pact.

Whether or not your character avoids going insane due to something inherent to them or the moon presences protection, it's clear that for whatever reason you're doing it's bidding blindly through the game.

Interestingly enough when the player is killed by Gerhman they wake up in a normal world with the sun shining, possibly because you kill Mergo and undo the Mensis ritual ie you stop the madness

How would you improve on Bloodborne's combat? After playing Sekiro I can't really think of any of its developments that you could graft back into Bloodborne's mechanics, but Bb's combat does seem too limited now. I don't think they capitalized on regain or beasthood enough.

Nothing. Sekiro was its own thing. Could graft anything from sekiro into any souls game? One thing that I might add from sekiro is the verticality to the level design. That's about it.

Maybe not to the extent Sekiro does it but I don't think some sort of verticality would hurt the combat much

it would be interesting to have a bloodborne sequel paced more like sekiro, with jumping and exploration around the outsides of buildings perhaps. Bloodborne already has a lot of mobility, bloodborne remade in sekiro's style wouldn't be too different, other than theme and parry mechanics.
What would be really great other than more verticality would be persistent world changes. It was going to be in ds3, dragonrot was a thing in sekiro, and there was some interesting world change stuff with insight in bloodborne, but there's far more that could be done, like enemies transforming more and more into beasts throughout the game, more downsides to insight like being targeted by the amydala, and side effects of using too much blood.

Eh, Sekiro's stealth elements are extremely half assed. Like, everything else is fine, but the stealth is very poor.

I think I'd be okay with increased verticality if they stiffened up the ninja movements a bit, you could cut ladders entirely in favor of a special pistol the hunter shoots straight upwards with a rope attached, like Theif's rope arrow. Give the player plenty of points they could grapple up to the rooftops in Yharnam for plunging attacks. Make me feel like Batman.

It's enough for me that it fixes the unpleasing image of running by all the enemies in the level, it makes sense that a ninja would sneak past them.

I think it's half assed for a stealth game but as an improvement to the detection system in their other games it's better. Though I don't like cluttering a game with UI elements everywhere like the icon that tells you if you are seen or not, the fact that enemies have a normal status and one where they are suspicious and patrol is a step up in terms of AI. Eavesdropping is always a nice mechanic for making enemies actually feel like real characters too, one of my favorite parts of Thief.
