O&S is super iconic and the aesthetics of the fight are amazing but Sekiro/Bloodborne/DS3 bosses are in another league compared to the classic Souls games. I think enemy and boss design is where Souls games advanced the most. And Dark Souls 2 bosses are so terrible that I feel bad for even mentioning them. There's like 40+ and so few of them are memorable. This is the only truly good one. Looking Glass Knight is pretty nice as well but sadly they screwed up the multiplayer implementation. There should have been a Mirror Squire covenant and he should have been able to summon a player in NG as well.

Those are the most ludo bosses, but even the most iconic Dark Souls 1 and Demon's Souls fights manage to be memorable even with dated mechanics. Demon's Souls for example has bosses with really few moves or subpar gameplay like Maiden Astraea's encounter but the presentation and everything else surrounding the fights are so good that they are positive experiences and the lacking gameplay gets masked completely. Meanwhile Dark Souls 2 bosses have both lacking gameplay and soulless presentation, so you don't rememember most of the 40.

That's not a bad thing. You can actually no roll / block most if not all of the Bloodborne and Dark Souls 3 bosses as well, even with their tracking. Fume Knight manages to be a truly fun fight even with the awful DS2 core gameplay so it gets all my credit. Plus he actually has good lore and presentation / design so he's the most complete package you could get from that game.
