Also there's no cockpit view in GT2 or Enthusia, which are the only racing games I consistently play.

I think hood and roof views are optimal. You have maximum visibility while keeping a view of your car's dimensions.
Roof view is ideal, unless the cockpit visibility is great.
Bumper cam let's you see what's actually in front of you, it's very close to the track so you get a better idea of how you're driving.
I don't play video games to accomplish something, user. I play them to have fun.

Field of view isn't important in racing games. Being able to see the curvature of the track and knowing knowing your car's exact angle of attack towards the apex is much more important. Bumper and Cockpit both give better feedback as to the car's intertia when going around corners, whereas with 3rd person high chase it's basically guesswork, and 3rd person low chase you're obscuring the track ahead in any scenario that isn't good Ng up an incline

GT2 might be my favorite, but GT1's UI was top notch. Damn good game still, too.
GT3 might be my least favorite of the Pre-HD GTs, but that UI... Was meh.

Hood or bumper when using a wheel (since most cockpits are badly made in games) and with a pad third person 99% of the way
