It't not very difficult, it's challenging and forces the player to learn patterns and rhythm but that's about it.

Nioh for example is way more difficult if you don't grind for good gear, if you simply try to rush the game and face every boss by using just the basic gear that you find, you will have nightmares.

Sort of. There similar in their challenge level but hard for different reasons. Nintendo games' biggest challenge is they never really had check points in any game so every time you tried had to try and beat the entire game in one go. It was challenging to memorize the entire game in order to play through it. Battletoads is a perfect example of this.

Sekiro on the other hand has more challenging individual moments, but they don't really have big punishments for failure so it's not that hard to progress.
