Dunno about the other games but Kingdom Hearts 3 uses Unreal Engine 4. As some of you know the Switch supports Unreal 4 (everything does) but, and that's really important only the recent versions of UE4.
As you remember Dragon Quest XI released in July 2017 in Japan and was supposed to also release at the same time on Switch back then. Thing was SE used an outdated version of Unreal Engine 4 and Switch doesn't support that. It was the modern version when they started developing but it took time toactually do the work so it's only natural.
Now it's 2019. 21 months later and the Switch version still isn't released, doesn't even have a release date if I remember correctly.
21 months to update from one UE4 version to another and adding a bit extra content so people are inclined to doubledip.
KH3 uses the same version of UE4 so there might be a Switch version but the soonest you can expect that to happen is in 18 months when we use DQXI as basis.
SE is incompetent and lazy.
