96 agility is enough to finish the game comfortably. You can go up to 105 for roll reliant builds, but higher than that isn't really worth it.

You become a little more hollow every time you die, losing a little bit of max HP every time down to a minimum of half your normal HP.
Using a human effigy on yourself completely reverts hollowing.
You need agility for literally every build. Assuming you aren't using magic and have base level ATN, it's 20 ADP for 96 agility and 32 ADP for 105.

so classes only determine your starting equipment and starting stats, other than that you can become anything you want later on in the game.
I wouldn't restart though, there should be enough effigies to get you going comfortably and you can level up anything you want and create whatever build you want.

invincibility frames, when you roll in dark souls, for a few frames mid roll you're invincible, those frames are called i-frames, so if you time your roll right as you're getting hit, you can negate all damage.
now demons souls, dark souls 1, 3 and Bloodborne have a fixed, and generous, amount of i-frames, in dark souls 2 however, you have less when you first start the game and you increase it by leveling up the adaptability and attunement stats, adaptability moreso than attunement.
Rolling makes you invincible for a short amount of time, that's called iframes. See iframes are important because they let you dodge dangerous attacks that might be disadvantageous or even impossible to block with a shield.
What is even so good about DS1 when you leave out interconnectivity
you can leave the covenant at the cat npc in majula, or by joining another covenant, company of heroes is basically hard mode, not recommended for first time players.
Go to Sweet Shalquoir (the cat) in Majula and select the option to abandon covenant. There's no penalty for doing so.
lul its a covenant you can talk to the cat in majula to leave it, it makes enemies and bosses have more health, do more damage and take less damage from your attacks. Youre essentially playing on hard mode thats why youre having such a hard time.

Put stats only into Vigor until 27 and Endurance until 30.
Don‘t level Vitality, ever.
Level STR/DEX/FAI/INT after HP and Stamina are no longer a problem.
Get a shield with 100% Phys block.

Combat design, enemy placement. Some bullshit is included (anor londo archers, capra demon, bed of chaos) but mostly it's on point and the reason for dark souls being regarded as hard but fair. I only realized how good it was when I played through ds2 sotfs, especially when comparing it to Black Gulch which places 2-3 invasions in an area with so many environmental threats, and the enemy-ridden bullshit areas Iron Keep and Shrine of Amana
There's a backstep but it's not that great compared to rolling.
You can absolutely clear the game by dodging everything with no shield. You shouldn't try to do that as a new player though.

Unrelated but I love Alonne knights. Its a nice mix of good ol' plate armor and asian armor
While ADP helps quickly falls off. Sounds odd but get strike weapons, many enemies in this game are armored knights and really helps

Level up Adaptability so your dodgerolls don't suck. I think around 20ish points of ADP / 93 AGI your rolls are acceptable. Blunt damage is pretty strong so regular mace goes a long way. If you're a dexfag, powerstanced rapiers also fuck shit up.

play dark souls 3 then bloodborne. Then dark souls 1 if you want to. Zoomers can't stomach des, ds1 and ds2 because of the jank.

27 vit will get you to the bottom of majula's well. Roll iframes are based on agility. Having more iframes means you can roll through larger and slower attacks. 88, 92, 96, 99, 105 are the agility values that give more iframes. The rapier with rings will kill just about anything in the game quickly and doesn't need to be supported with stat pumping.
Well if you start with the worst of the series then it's uphill from there honestly. Even though DeS might be the mechanically worst / jankiest game out of them all.

It's not that hard... But I lost interest in Souls for around a year because I got bored of Dark Souls 2. I went back to it and finished it before Bloodborne but it felt like an emulation of Dark Souls rather than an actual sequel. But thankfully it was an exception rather than a new norm for FromSoft. It's not terrible or completely worthless but....yeah.

You can buy a spear from the blacksmith in Majula, the guys in Forest of Fallen Giants also drop a different spear and you can find a halberd as a treasure there too.
