Older devs had to work with retarded constraints on hardware and have through the years. if you give them time to apply that conservative programming style to a modern engine you get crazy fucking good results. if you hire a bunch of multicolored haired weirdos without experience and force them to use Unity or Unreal then you get poorly optimized and shit engines tied with devs who dont know how to use them properly.

Also the engines created for those games were specifically designed (RE engine had 1 team with 2 games in mind) and catered to that style.

American and English desingers are getting closer but shit like Naughty dog, Santa Monica uses really weird rendering techniques and usually costs the games to run at a slower framerate and designed around that speed.

Japanese devs are concerned with improving foundations. Western devs are too concerned with building a new foundation from scratch every time, even when they don't need to.

The games aren't super narrative focus, just enough to give the gameplay a setting really. That order would probably be best though. If not you could go 4, 5, 0, 7. Six is kind of looked down upon even if I think its decent. If you have a 3DS, the Assault Horizon game on there is quite fun and a remake of 2.

They're all self contained and aren't told in a particular order, but they do take place in the same universe.
Each of those games just tackles a different historical event in the timeline of Ace Combat's universe, and is pretty much designed to be played in whatever order you want.

You have to go into them understanding that they are corny. If you're okay with corny stories then you will find them extremely entertaining. They're very Japanese in their writing.

To put it into perspective, pilots like trigger and mobi are talked about by the supporting cast like they are some sort of diety. The games are very good at making you feel like an Ace.

They've realized that selling on more platforms makes money and doesn't hurt xbox because the only thing that really matters in the end is that the games aren't in Playstation. Hardcore PC gamers were never gonna buy an Xbix in the first place so why not make some extra money on them while still keeping their games off of Playstation.
