The only issue I have with excessive violence is if they take it way too seriously. Like they do this insane impossible to do shit but instead of playing it for laughs its meant to be super serious and dark and gritty and it just seems like baby's first edgelord game more than anything.

It's Mortal Kombat, it's their unique gimmick.
You don't need to worry, no other series takes things to this extreme level. Mortal Kombat made a name out for it by taking violence to such an extreme level it overflew into comical territory, and pic related is just embracing it, and doing what people are expecting from it.

MK gore does make be a bit uncomfortable at this point, must be all the realistic screaming and pain tied to it. I was perfectly fine with older MKs growing up.

the real effect of the game you're describing would still just be more desensitization. the player would learn to filter out the uncomfortable sensations as he pushes through. the only way to humanize NPCs would be more realistic AI and world structure, basically what RPG devs would love to do but can't. just think of the promises of radiant AI in oblivion and how the next TES probably still won't have AI as elaborate as that (faked for a demo) proposal was.
we need convincing synthetic voices and body language generation to free us from the shackles of motion captured acting out of the can. and we need genius programmers to fit genuine "AI" into a game's real-time performance. and we need genius designers to build a game that allows for all this detail but also is fun at the same time. we're nowhere near any of this. the best we can do is create animations based on real voice recordings, sparing the motion capture expenses. certainly a nice step forward as it allows us to have as many unique voice lines and characters as we can afford traditional voice actors, not expensive mocap. but as far as AI and design goes we have no clue how that could work. AI in existing games is literally 99% path finding. there's very, very little complexity going on otherwise, and look at how shitty the path finding is, considering!

Rising Storm and Red Orchestra (the newer ones anyway) have pretty realistic death screams. The gore isnt 100% what you're looking for but its close.
Max Payne 3 had a good gore system but its a bit comical when you shoot a guy in the head and a burgundy coloured branch sticks out the other side of his head.

Strangely enough, I think older media was way more brutal. Sure, games were 2D pixels back then, but many gore movies were just insane, to the point where film makers even added real footage. Even the whole faces of death shit started in the late 70s.
I think video games are still far away from that.
