Depending on the type of construction, the colors may be industry standard. For underground utilities, for example, red is usually electrical and green is sewer.

I'm all for accessibility and trying to make it to the people with physical disabilities can enjoy vidya too, but that's more of a job for hardware designers (like the customisable controller Microsoft developed that lets you adapt it to your disability needs) or maybe things like a colour blind mode.
Making the game slower or letting you tweak enemy HP and stuff doesn't make the game more accessible except to those with no patience or skill and robs actual disabled people of the opportunity to experience the game in the way the developers wanted you to.

Let's be fair, button remapping should be standard unless the game uses a gimmick for the controls as a core gameplay part, THEN it is impeding on the artitstic vision, becasue there i very little reason NOT to considering the gains, not only with accessibility, but also potential challenges for people using non-standard controls like the PowerGlove.

Honestly, I'm fine with them adding an easy mode. I'm also fine with them holding their ground and not adding an easy mode. All I care about is the development team's intended vision.

Though, I do wish games with easy modes had a specific achievement for beating the game on EZ mode. That way, just like with hard mode, you could tell how somebody beat the game when they wanna talk shit on the game.

Colorblind support should be industry standard. That shit should be built into every single engine as an option. It is a simple swapping of colors. It should be standard middleware. You solve it once, it takes 5 minutes to add an option menu for it.
Every game should have colorblind support and fully remappable controls. Those are real accessibility options.
Easy mode is only an accessibility option is being a game journalist is a disability... which it seems like it might actually be.
