In Demon Souls bosses were meant to be beaten as part of the level, its why they are kinda easy too, its why the archstones are always after boss and nowhere else, so it made sense for you to have to beat the level over again, but ever since Dark Souls this has been an archaic design choice, especially with how long boss fights take now.
