Unironically early sonic games. The games were made specifically to get faster with each playthrough by learning it so speedrunning is just a logical extension of the gameplay loop. Got a WR and it was the most fun I've had speedrunning a game besides MK64.

Tony Hawk games are always fun to watch.

Donkey Kong Country is good for casual speedrunning, I've heard.

so have I, can't seem to find a working pc version for it though

Sonic adventure 1 is pretty fun once you learn the casinopolis skip, lots of easy to learn skips that make you feel like a god even if its not all that impressive, though I am very biased towards this kusoge.
IL Sonic Mania time attack is fucking great, if 1 and 2 had PC ports i'd recommend those too, 3&K and CD levels are too big for fun time attack IMO though
Castlevania SotN Richter mode is great, very simple and its pretty short even if you dont know the route. same with AoS julius mode but richter is better imo
Super Metroid seems fun but I've only played it once casually
Really as long as the run isnt too RNG reliant or a turn based RPG with no real execution and you like the game you should be fine
