Sekiro doesn't have good stealth but that webm is not the reason why.
Actual reasons why the stealth is bad:

No, the best strategy is to stealth kill one enemy, then run away to the other side of the environment where the enemies haven't aggro'd you (the yellow triangle is not aggro), then stealth kill one on that side, and move back and forth that way.
Once you have the blood cloud you basically have killed everyone the moment you stealth killed one

seems like the AI was modded so that he only does the lunge grab. when i played if i backed away like that sometimes he would lunge, but a lot of times he would walk towards me to do a different attack

Yes but there are still mini-bosses or tough regular enemies that only have one health bar. Like the purple ninja at the pagoda in Hirata, you can trigger the fight, jump down to the water, go back, and backstab him. Makes a challenging fight (at least for new players) incredibly simple.

It's not my fault that the AI can't do shit about simple cheese. I shouldn't have to humor the game by not making use of a really obvious strategy. Developers should actually design the game properly. I'm not even going after From specifically, I've had this same argument with a lot of games. Balance is not the player's responsibility.
An easy fix would be to have enemies have heightened awareness after spotting you, so it would be harder to pull the same trick again. And you'd only be able to reset that by resting at an idol (which would also respawn all the enemies you killed). Alternatively there could be special enemies that only appear once an area has gone on alert, or enemies that transform once alerted. etc etc, there's a ton of solutions for this problem. Hopefully the DLC will come up with something.
The thing is in Sekiro it's incredibly simple to run away. There is not a single enemy that can keep up with you, and in pretty much all cases you have a ton of space to work with. The punishment you will suffer from doing a hit & run strategy is minimal. At least in MGS1 (a fucking PS1 game) if you trigger an alert you'll probably get shot a bunch because Snake is far slower and more frail.
I should also clarify that besides the stealth I think Sekiro is a great game and better than Soulsborne.

Only if they vaguely saw you run in there. Plenty of times I've made enemies suspicious, sneaked somewhere else and they went to the original spot they thought they saw me at. It's obviously not going to be perfect, it's a video game, so I wont deny there have been moments where it didn't make sense that they knew where I was hiding but thats fine since they'll reset eventually.

Once again, it's a damn video game. If every time you were caught and left the area they still remembered you then you pretty much can't do stealth anymore which completely defeats the point of the game. Which is why almost every if not every stealth game works like this. Stealth is actually a focus and not a small feature you know.

Only for one of the deathblows, leaving will reset their health so you can't do it twice in a row.

you suck m8, typically there's an efficient way to kill all the enemies without getting caught more than once or twice at best. You have skills that can assist with your stealth and if you're smart you know what move to do at what circumstance to trigger less enemies. This game is about efficiency with your movements (with bosses, it's about dominating the rhythm of the fight).
the stealth is great for minibosses especially when combined with ninjitsu.
You actually have to think about how to engage a pack (atleast compared to souls games).

The Protagonist stops her and allows the Traitor Monk to run away because he claims she can't kill the monk for her family's death because it isn't right.
Protagonist completely forgets this is Fuedal Japan and there isn't even a justice system for the female samurai whose family were killed due to the Monk betraying the village's safety.
Protag wastes time fighting with the Female Samurai to the death, while Mongols draw nearer to the fight between the Protag and the Female Samurai who starts fighting each other because the Protag lets the Traitor Monk escape and doesn't allow the Female Samurai to seek revenge for her murdered family and murdered hometown.
Yeah, Ghost of Tsushima is shit because the Protag is a Moral Fag Piece of Shit who won't allow a female to kill the monk that betrayed the local village to the Mongols.
