It's easier to remove yourself from the situation or disassociate from it but it's still a real, human interaction that can cause anxiety.

For that, there's a solution
Here are a few different approaches, or mindsets/perspectives really, you can use step into playing games with others in versus/comp scenarios.
1. Stop being so critical.
It's just a game, like moving around chess pieces on a board, it's trivial to your real day to day necessities so don't weigh on it too seriously.
If you're not playing for money, your flesh and blood, nothing is really on the line right?
So relax user. If anything when you get anxious, excited, etc, you should receive this the same way you would as seeing a movie or reading a book that makes you feel something, anything. If it has made you feel something, that means it interests you, and that's a good thing.
Better than a game/book/movie that is boring and makes you feel nothing right?
Just make sure your feeling isn't anger/frustration. That's a sign you're playing to be serious and not playing to have fun. Fun comes first and if you aren't having fun, put it down.
2. Having fun and learning should be the goal.
The only way you'll ever be able to play against others is by taking a loss in stride, and you can't do that if your ego is telling you that YOU have to be the winner. If you're going to play games, you WILL eventually lose, it's a statistical CERTAINTY. We become the things we think and practice, and if you make a practice of getting angry and flustered when you start to lose, you've now made a practice of crumbling into a loss instead of maintaining composure necessary for a recovery/comeback.
The way to break out of this is to focus on having fun, and learning.
Idiot who makes a habit of losing: "GAWD I can't believe I lost, I suck at this game, this game sucks anyways"

And unless you're playing in some globally ranked tournament, nobody is going to ever remember your victories or losses, so stop being so invested in either.
Just play the game in the moment and try to enjoy it.

Get so used to the incoming/outgoing of wins and losses, that you inevitably end up not caring about either, and are more focused on the aspect of playing the game itself.
6. Watch videos of people playing your game with some degree of analysis.
For Starcraft this could be watching a game cast by Tasteless.
For AoE2 this could be watching a game cast by T99 or SotL.
I'm not much onto casters/analyzers of FPS games, but I'm sure they're out there.
Whatever it is, occasionally take time to sit back and not be the one playing, let somebody else take the wheel, get into their mind, and let your brain experience it differently.
7. Always say gg.
Even if you didn't play well, or they didn't play well.
Even if they say nothing, or they are spamming chat.
Just say gg and nothing more. Every game, no exceptions.
This will help you become less reactive to salt.
