It's definitely the most playable, and I think it has a lot do do with being able to use the mouse & kb. It feels like a proper game at last instead of fiddly ass gamepad mechanics.
The games appeal for me is the stealth emphasis, you can develop all kinds of weapons but they're a red herring, and the game punishes the shit out of you when you get spotted in later levels. Sheer sneekiness is always the most rewarding approach.

Story is pretty good, but mgs4 retconned a lot of stuff for fanservice.
this guide is pretty good, but when you get to mgs3 make sure it isn't the original release. It has camera issues. You'll know if its the right one if its from a remake or has some other nonsense name in the title.
theres a remake for mgs1 called the twin snakes, but i wouldn't play it over the original. it has a lot of different changes that arent exactly better.
Metal Gear Solid is like James Bond / Rambo versus the X-Men. There are straightforward and conventional solutions to most challenges and often some extremely outlandish and bizarre solutions. It does a good job of creating a universe where you accept the serious and silly aspects in equal measure.
Most people would recommend playing in release order (and rightfully so) but if you are really uncertain about commiting and just want a good sample of the series, play:

and
>MGSV Ground Zeroes
Ground Zeroes is essentially a next-gen version of the Tanker in many ways, so you can compare earlier and later entries in the series.
it's the origin of cinematic cancer. imagine the average western moviegame except at least it has decent-ish japanese arcade gameplay to go with it. go play the first one (that's MGS on PS1, not the Gamecube remake, and not the MSX game) and see if you like it.

It's a fucking electric boogaloo about america and russia fighting over megazords, with over the top looney tunes characters and cringy melodrama. But the OST is very good.

if you don't mind retro games, play the first two Metal Gear 1 and Metal Gear 2 on the MSX, then on to MGS1. If you don't have the patience to play 2 old games just start with MGS1, although you're going to miss some references to the story. If you liked MGS1, you play it in release order afterwards

Read the plot of Metal Gear and Metal Gear 2. Play the rest in release order.
They're not bad, just lower your standards for a bit and you'll see that they were staples for their time. Also MGS2 *might* make some sense after playing the 3 games because you know that it's essentially the same shit over and over
