Almost done with two games, though I don't know wether to start Horizon Zero Dawn, The Witcher III, or Bloodborne first

Depends on what you like. Horizon is great sci-fi fun, The Witcher has a great story so I'm told, and Bloodborne has great combat, interesting concepts and insane level design

Currently playing Fallout NV to completion for the first time. I would always help Goodsprings with the Powder Gangers and then just drop the game.

Ive played the game 5 different times and always drop it when I get to The Strip and get all those quests from yesman.

My video game backlog is definitely the largest, but my model and miniature backlogs are my favorite to work on.
Wish i was better at time management so i could work on my book backlog and my tv show/movie backlog

I dont actually play all of them. I at least look at some lets plays on youtube before I trim it down to the games I am actually insterested in, I just dont want to loose out on some hidden gem in there.

I feel like without friends to play with, a solo run of Borderlands is kind of hollow. That being said its been years since I played the first one.

Most of the time I find the opposite to be tha case actually.
For example I am not a fan of playing RPG's I have tried to get into Baldurs Gate and Fallout multiple times but the gameplay is just so unappealing to me I have decided to just watch lets plays of them on Youtube because I just cant stand playing them.
Some people might lynch me for this but I am doing exactly that with Earthbound right now, If Earthbound had been a LucasArts Adventure I would probably be all over that but the constant monotonous battling and inventory management and eventually looking up stuff online for minmaxing would just be too tedious for me.

I mean, if you don't like then don't try force yourself to. I'm kind of on the same page with you in tastes regarding those kind of older RPGs though.
