Closest would be the Americas expansion for MTW2 in which you can use both pikemen and musketeers against the natives. Later after acquiring gunpowder you can do the same in the grand campaign though there aren’t many good factions with pike units. I think there is also a mod that does this era as well but I don’t know the name of it. Maybe it’s late era stainless steel.

The crusader mechanics in the new CK2 DLC are great. The kingdom title is given to a candidate proposed by whoever gets the highest score, but the duchies and some counties will be distributed between the rest of the winners, so crusader states end up being highly multicultural: you can end up with an English king, french dukes, italian counts, german barons, etc. Your character can even get spiritual visions and quit all his lands and titles to join a holy order.

Yes, you can't play as characters with no titles. You assume control of the heir, and your character becomes a NPC. However, since he held all those titles, he keeps strong claims on them, and if he has any further children (unlikely but possible) they will be born with weak claims.
