The ones who form the basis of a lot of the characters (Saber, Rin and Sakura) are in the VN and have sex scenes, also others like Medusa, Medea, etc.. You can get some more by playing the Extra/Extella games, but at the end of the day a lot are only in the gatcha game. For that you can probably watch the main story and events on youtube or something.

Then watch their My Room and ascension, and bond scenes and story/event scenes on youtube, you dont miss out anything but the gameplay that way and don't have to deal with that, nor annoying gacha mechanics, nor waiting for events and the next story missions etc.

Also you can watch the Zero and Apocrypha (quality not guaranteed) anime for more characters and KnK for Shiki and Fujino.

Apocrypha is much better in LN form if they're willing to read VN's anyway. Jannu isn't thinking about homu cock all the time and has much more dialogue from red servants.

There's a lot of development that didn't make the cut which is saying something since it's rushed enough in novel form. Just too many characters. I'd say give it a read if you enjoyed the servants or saw promise in them and want to see more. Atalanta actually exists in the LN for longer than 40 minutes too.

Babylon and Solomon are the only major high points, everything else varies between okay and terrible (Septem springs to mind). Whether it's worth the slog is down to you and how invested you in the franchise, really. I plowed through the whole thing but then I've been into TM since 06 Deen/Stay Night, your mileage may vary.
