A lot of games have older and especially more experienced characters, which is part of explanation of why the player character is so badass they can kill armies of enemies. Even old Star Wars games did this. Starkiller was OP as fuck, and so was Kyle Katarn. There is enough badass guys like that for it to feel generic by now.

It means there is a probably going to be a time skip at some point. It'll start in the Old Republic, just after Order 66, then there will be a big skip halfway through and we'll be playing as an adult version of the character during the OT era. That way they can have both. Since this kid is apparently in his mid-late teens during PT I doubt they'll find a way to get the Sequel trilogy in there without some kind of weird plot device.

Jedi Academy let you play as a non-human, and there was that droid creator game, but otherwise I don't think there has ever been one that didn't involve create a character or some kind of multiple choice deal (like Jedi Power Battles).
