Because the simultaneous yet asymmetric control of your partner was one of the cruxes of the gameplay, the Switch Co-Op gameplay attempts to mimic this but ends up being rather unbalanced and nowhere near as elegant should you choose to use both characters yourself at once instead of co-oping.
The DS systems was what the game was designed around and the hotchpotch "fixes" to the ports just deliver less a solid experience as result because the removal of the "gimmick" cheapens the original vision.
TWEWY was a product of its time and what it was created for, and the ports and remixes are like getting covers of a song you really liked in a new "hip" music style, only they are ones that skip and replace parts of the song that were part of what made it so good.
TL;DR: OLD=GOOD, NEW=BAD, GET OFF MY LAWN YOU DAMNED KIDS!
