My girlfriend (whos a non gamer) wants to play a game with me. I was thinking about the earthbound/mother series because its not a fast pace. Which one should i start with her earthbound (mother 2) or mother 3?

Any other games for a non gamer will be appreciated to

Pick something that she's guaranteed to not lose at reach a failstate in or she'll drop it like a bag of hammers once you stop pushing her or she no longer sees clear enjoyment from you. And don't overestimate her. She likely has the capabilities of a 5-8 year old when it comes to games.

Earthbound might not land, a lot of stuff that's funny in EB is funny because it's different from other games and subverts expectations, if someone who doesn't play video games plays Earthbound they'll just find it weird, and boring and probably skip a lot of the flavor text or good NPCs.

Start off with something more standard like a Sonic game or Mario 3D World.

I first started playing Minecraft with my gf. She ended up being addicted to it for half a year. She asked to borrow my Switch last week and now shes playing through Xenoblade 2. Id say Minecraft is pretty good gateway game.

Well user, wouldn't it be more fun to play a 2 player game first, if she's a non gamer? Then if she's not having a great time with the game, she'll still have a nice time because you're both involved. Mario Kart is great for non gamers. But I'm assuming you've played 2 player games together and you're looking for single player games.
Animal crossing is a game I've had good luck introducing non gaming people to.
If you're looking for something more action oriented ratchet and clank is alright. My girlfriend likes resident evil 4, she recommends that as an intro to shooters because aiming and moving are two completely separate things.

If you're thinking of playing something from the mother series, go with mother 3. There's more story elements and plot compared to the first two, and it's much more beginner friendly

Rpgs in general are a tough recommend for non gamers. You run the risk of the grind just wearing them down. If you're gonna go either earthbound or mother 3, go mother 3.
Undertake might not be a bad choice just because the battles are more involved. The game does get difficult, but it has a decent difficulty curve

This. People who don’t play games are really almost unimaginably bad at them. I had an ex who I tried to introduce portal to a long time ago, and even something that I thought would be incredibly simple like moving around proved to be an obstacle.

My advice is go real simple. If you have a switch, something like the new yoshi game. Something that’s comfy, and encourages exploration with simple controls.

That's an awful idea. Starting someone off with an slow methodical rpg will turn them off fast. Play something fun together, like mario kart or LBP. Something you can play TOGETHER.

OP, I played Firewatch and she loved it, then Life is Strange and we loved it, then The Walking Dead seasons 1-3 and she loved it. Try story heavy games like those first.

Monster Hunter world. Has plenty decent range of hard and easy fights to be fun for both of you. I guarantee your suggestions will be fun and a nice time but seriously won't ever see the end of the game. Plus monster Hunter is like a dress up game and girls live that shit.

This is unironically a way to get someone who's terrible at games besides button mashing or just flat out drunk/high to enjoy it and FEEL like they're doing something, they'll rarely run into a heavy opponent or a boss and need to do any specials or pay attention.

It's a life sim; you manage your town, collect stuff for your house, make friends with the locals.

Spyro is a chill game you can do at your own pace
Getting to the end of the game is pretty easy but there's a bunch of extra stuff she can do if she wants
