Mainly because it's part of the core gameplay loop and you'd be denying yourself a major aspect of the game to preserve items that are in abundance. But otherwise, enemies drop important materials, sometimes better weapons, and rupees.
I guess you could just focus on throwing bombs and using the environment, but that seems like that'd be a bit of a slog in some spots.
So you can open a chest containing a shitty material or another weapon that'll eventually break.
Cause people love gameplay loops like that.
To give a purpose to weapons. And the health system, and general attrition to get to each respective part of the game that involves divine beasts

They prevent the overworld from being an empty field. The game gives you the option of either killing the enemies, sneaking past them or just outrunning them. The first two options are preferable towards the start of the game when looting enemy camps will give you weapons and items that you can use. When you become suitably equipped, you don't need to rely on enemy camps anymore so you're free to ignore them.
All the hordes remind me of Zelda II. Only downside is no XP meter.

This. Instead of grinding for materials I'd rather just kill the goblinos while wearing armor to level it up. Justify it with the clothes absorb the "leaking magic" or some shit. Material grinding was the most godawful shit.
Have you played the game? Theres more to divine beast quests than the dungeon. And theres lots of slaying quests in the towns after you finish a divine beast quest.

There's nothing forcing you to complete all the shrines. You can head to Ganon as soon as you get bored of exploring.

There is none. At most you can get a few hours of fun of messing around with them, but at some point you will stop bothering.
Nonsense. The point of the game is everything that's in it. Every element is worth examining and criticizing.
It's funny how fanboys argue that BotW is like LoZ when they could not be more different in terms of combat and mandatory content. The whole goal of LoZ is conquering the dungeons to get triforce pieces and unlock the way to Ganon, and doing that involves A LOT of fights, many of which are fairly challenging. Compare with the divine beasts (that aren't even necessary to beat the game) where there are barely any enemies and they die in one hit, outside of the bosses which are all weak to headshots.

I enjoyed it mostly but combat and weapons breaking is still clearly the weak point
The reason people compare BotW to LoZ is because the game finally broke away from ALttP's structure in terms of its narrative and how it gates the player's progress behind certain plot points. No-one claims that the combat or dungeons are identical in LoZ and BotW. If anything, the dungeons in both games are on completely different ends of the spectrum. LoZ dungeons are almost entirely combat based and the closest thing and the majority of puzzles are just finding which block you need to push. In BotW, the Divine Beasts have pretty much no enemies inside them and the main focus is solving puzzles in order to gain access to the terminals.
