Ashen One is very insecure and makes up for it by beating up anything that tries to fight him. He also has amnesia and a terrible sense of direction so he's always running into people's territory.

Both are challenges, in-universe. If you cannot defeat the Soul of Cinder you are not worthy of being cinder yourself.

Also Soul of Cinder attacking you as a test makes no sense, all Soul of Cinder cares about is continuing the Age of Fire, defeating Soul of Cinder is just a barrier to this, why would he not want you to do it?

There is a reason why every boss attacks you in Dark Souls 1.

I actually found the opposite to be true but since Maria only transforms at 60% health you can beat her without much trouble on your 1st playthrough by tanking her attacks. On NG+ though Maria is definitely more challenging whereas Friede is much easier once you've beat her once before since the main challenge is just getting to the third stage.
