I like FFXIV's mechanics but they're basically the same as WoW, you're just expected to also do damage.

I've been kicked a grand total of once as a healer, and that day I was just doing utterly horrible for some reason and couldn't stay alive in-game to save my real life, and so I honestly needed it to get me to stop for the day.

Actual healers are the first targets since I only play MMOs for PKing. Since PKing is essentially dead and buried because carebears won't pay for a game with risk, I no longer play MMOs.

GW2 has pretty fun healing, partially because the trinity isn't a hard requirement so your party setup has a TON of flexibility which undulates based on player ability
Nothing is more satisfying than carrying pugs in fractals as an auramancer, it pulses most of its heals in a wide radius around the healer and tends to be really reliable when your team needs pure healing
TESO also has pretty fun healing, but it can be pretty janky with how you need to ground target all kinds of stuff

This. I've tried both WoW and FFXIV healing (although I stopped playing WoW after Cata).

WoW healing was more fun to level up, but FFXIV healing was better at higher levels. Mainly because FFXIV starts off really slow and it takes a while to unlock all of your shit.

MT in Vanilla WoW and tell me it's the easiest role. It's not incredibly difficult, but you have 39 people watching your every move and when you make a mistake it costs them hours of grinding for consumed. If you make a mistake as healer no one will catch it. Pretty much the only mistake you can make as a dps is not performing a infrequent mechanic or ripping aggro, both of which are simple to avoid. You really have to be an asshole to MT.

PSO2 Bouncer/Techer so you can dive in, combo and group heal leaving little crit zones for everyone to enjoy.

Tanks can't make one single mistake because not only will it probably cost the whole raid, you're the focal point of every fight.

DPS is and always has been the easiest role. Aggro and sustain are handled by the Tank and Healer, you just have to make sure your gear is good enough and then faceroll the keyboard.

Also healers can be as Chad a anything else, it's just that the role attracts all of the mentally retarded trannies and submissive women, but good skilled healers are the ones that get the most highlights.
