the thing with sekiro's difficulty design is that it's very much like gothic. the game starts out seemingly unfair but as you learn the system and gain new mechanics like mikiri counter, firecrackers, umbrella, high monk etc you start to abuse these devices and use them gainst the game itself. theres so many flavors of cheese in your arsenal that the game becomes easy if you just put in the effort to make it easy.

Pairing journalists with the disabled is an insult to disabled people.
Any games with difficulty options should name their lowest difficulty modes "Journalist Mode".

The core appeal of GnG is the huge amount of unpredictable or random elements and interesting systems that give each run variety, from the highly random red arremer AI and enemy spawns, to random weapon drops to systems like Ghouls' chest system. Maldita Castilla has none of this, it completely misses all the things that made GnG exciting and is just a generic platformer. It's different to GnG but not in a good way since what it does is just take the superficial elements of GnG and build a completely generic uninspired platformer using them. I haven't played Sekiro yet but I managed to style in DMC5 on SoS with just two okay fingers on my left hand by using WASD (+1234 for Dante styles) and my right hand on my controller. I'm fairly confident I'd be able to git gud at Sekiro or at least cheese it. I have patience.

HOWEVER, from an economical standpoint, an "Assist Mode" would theoretically increase your potential playerbase. Look at MGSV's Chicken Hat. Or whatever that game was that added a watermark to your screen so you couldn't brag about beating it.
I'm fairly certain that adding a save modifier that decreases damage taken, adds a watermark, a pink bandana so you look like a dunce, etc. should be worth the extra customers, even if they're well, the kind of people game journos are.

Umihara Kawase, the best 2D platformer, does the exact same thing as Dustforce, very simple minimalist 2D graphics, soothing colour scheme, upbeat relaxing music, really high difficulty. Plenty of NES games were "minimalistic" by their very nature too since the system could only do so much, look at Gimmick. That's not an argument either, none of these games had the gameplay of Dustforce, the whole subgenre of precision platformers did not exist back then.
