I don't see how Skyrim ruined a genre. No other company makes anything like Bethesda RPGs besides a few niche independent devs. WRPGs in general are a dead genre that had already been phased out by Ubisoft openworld trash. Smash invented its own subgenre which only indie games follow too.

Name one that isn't a loot shooter or Bethesda game. The only one I can think of is Kingdom Come and The Witcher 3. There's a ton of games with light rpg elements, but that emerged in Ubishit games.
