An amazing first couple of years, then you realize there's absolutely no endgame or justification to play once you've got all the animals/buildings and maybe got married. It has a very solid foundation to give you as many as 100 hours of addiction, but once you hit that cliff, you fly the fuck over it and never return.

I can agree with this. You get to the bottom of the dungeon, marry someone, get a stable income going, and then realize that from that point on you are basically just spinning wheels. You've won and the game has nothing further to offer you.

How do I change my profession? I've recently started playing on Android and after hitting level 5 in farming, the game automatically chose agriculturist profession for me without giving me any choice, probably because I didn't had any artisan goods yet. But I wanted artisan profession for late game. I'm already 27 hours in and don't want to start a new file.
Because you are still just doing the same stuff you have already done very recently, with very little variation. It's not a flaw with the game, and it's something that happens with Harvest Moon and other farming games too, it's just the natural course.
If you want one of these games to have a longer play lifespan you need to focus as much on what can be done outside the farm as on it. If each townsperson and romance option basically had a visual novel route tacked on to them you would have incentive to try them all. If the dungeon/caves were the first of many, with a storyline and end boss attached to a series of adventures, then it would feel like more than a tacked on addition.
As it is you can be at ten hearts with everyone you care about, and have read the roughly hundred lines of dialog each, and reached the bottom of the mine, by the first year. Especially given how slow for farming winter can be.

This game really needs some post game content. Mulitplayer is fun but it only gets you so far.
I just started my first save ever a few weeks ago, and decided I wanted to roleplay as an addicted fisherman that earns money mostly by fishing, and so I started with the River Farm. He lives so much by the water that his skin has turned blue and his hair has developed into something like a green algae, and is always messy. As he prefers the wilderness, he pursues Leah as his ideal wife. His best friends are the hobo and the other fisherman. I wont even prioritize much the animals or crops, everything I do with them is just so I can complete quests and the comunity center. All I need is fish.
I bought this thinking that it would be just like stardew and it also have "very positive" reviews on steam, but it is just fucking boring and too grindy. Can someone who've played this game tell me the point at which this game becomes somewhat enjoyable? I've only played it for 3 hours but can't seem to enjoy it.

Hate to break it to you, but you may not be cut out for games that involve payoff for investment. These games are designed literally for the slow gain in progress for that slow and eventual development. The satisfaction isn't from big money or large farms, it's what you did to get there.

A thoroughly enjoyable game like good old Harvest Moons, but better. Also lots of freedom and room for creativity and a simple action RPG in the caves.

You're correct on all points but the couch thing. Playing comfy shit on the couch is fucking incredible because you can sit, lie down, or just hang out in whatever position you want, it's great.
Although the girls options aren't really good, it certanly feels good making stuff and then see how it affects the city or getting rewarded for befriend people, also the option to hang around with them, also the festivals feel pretty active, the dungueons are pretty shit though by how easy they are, weakest part of the game if you ask me.
It feels grindy because of the stupid timer for anything you craft, which I recommend remove through cheat engine or a mod.
It has flaws but it's pretty decent, and at least it seems it keeps getting updated.

I found that using a time mod was incredibly useful if you use the mines a lot, and the tractor mod makes farming quicker
Hell, it even runs great on the Vita except on rainy days where the framerate drops, but nothing game breaking.

It's my first save and I have just reached summer, so I havent had much time to know the characters very well. It hadnt ocurred to me that she might be vegan, even after looking at her wiki page. I searched for any girl that liked seafood, but didnt find any. It it were "me" playing, I would probably go for one of the sisters (the bartender or the city girl), but I think my character would like more Leah as I feel she might be the most comfortable one with wildlife and nature, as she lives distant from the town square, and seems to enjoy going into the woods to paint/scult the nature's scenery (also it seems she likes the hot guy who lives in the beach). Got any suggestions though? I still have time to change waifus.

Not that user, but there is divorce in the game so you can change your waifu at any time, even turn the kids you had with them into doves.
Alternatively, if you're on pc you can get the polygamy mod and marry all the waifus just make sure to carry a rabbit's foot with you when they get to 10 hearts
No exclusives, but PS4 and Xbone are still behind on updates (PC, Switch, and even Mobile are on 1.3 while both other consoles are still on 1.2.) PC is the best version of the game anyway because of mods.

If you only like Leah, you can just gift her any easily obtainable foraged items like flowers, fruits and vegetables in early game. As you're primarily focusing on fishing, you can even gift her driftwood which I don't know why but for some reason she likes it. She's really easy to date just keep gifting her the "Liked items" and some "loved items"(if you happen to have them) and you'll probably reach 8+ hearts by the end of fall. When in doubt, just check the wiki. The other girls I love are Emily and Penny.
