Easy mode should be a hidden hard mode where everything is easy until you fight Genichiro at the castle. The game would then switch to NG++ difficulty. There would always be an option to skip the fight before it starts. Choosing that ends the game with you as Genichiro's lackey.

I've been calling bullshit on tons of bosses in this game, mostly for being cheap pieces of shit that just have super armor for every move or too many moves that look exactly the same so the tell is questionable at best as to which move is coming so you need to guess which to dodge/etc.

But Jesus Christ man I made it all the way to isshin, the 4 phase fight. How can you possibly, genuinely, get stuck in the game at something like gaurdian ape or the guy on the horse, or the bull, or things like that? Even after troubles I had with certain bosses (butterfly, ape, monk, etc),I still managed to win and progress.

How can you possibly not succeed at one time, even by pure luck, to get to the next area? Even children can do it, handicapped people, and so on. How can you possibly be SO FUCKING BAD AND BRAINDEAD, that you just can't do it?
