what makes AC great is that it doesn't forget it's still a video game and project aces, the developers, change mechanics to be less realistic and more video gamey than needed
stuff like high g turns is pretty excessive and they have misses with their spinoff titles but they do good
start with any in the holy trinity ac4, ac6 and ac zero
these games are typically remembered for their mission variety (which is probably the best in 7 so far despite all my other gripes with the game), the dialogue and the fact that it just feels good to fly. think of an fps you like with good gunplay, that's how it feels in ace combat with planes

I think the AC series is deceptively recommendable, which is why I don't mind tossing it out there. I feel like a new player will always be pleasantly surprised by it, which is a nice thought.

I got a friend into the series. 7 was his first AC game. He got the hang of it fast, took a lot of folks advice and started with normal/expert controls, actually does decently in mp.
I agree "accessible" is a good description of AC. It's not super casual easy but it's not true mil sim autistic hard either. And as long as your not polygon you should be able to dance with the angels.

I think there are people who just can't figure out how to play it no matter what. Like the basic rule of "you should get behind the enemy and be in a kind of straight line with them if you want your missiles to hit" just never clicks with them
Maybe it's just because there aren't a lot of missile-centric flight combat games out there

Now that you mention it user, 7 had a barebones tutorial. Your right that "getting into a good angle" isn't explicitly said or spelled out. It really should have been, like they could have had Clown or Knocker just suggest it.
Hell, I didn't even you know planes had flares until I started seeing the bad guys use them.

I think it's a mix of not totally getting it and not getting how to do it
I've had a couple friends try the PS2 games and they would just charge the target indicator the whole time and fire missiles the second they got a lock
